I liked the Leonardo Hotel Edinburgh Haymarket. I thought the location was good for a first time visitor who likes to wander the city to see both the main attraction and where people live. The hotel itself was great, the staff were amazing, and I felt quite at home during my stay.

Clean and spacious room, the staff was helpful and friendly. Unfortunately not too walkable to locations we were interested (Edinburgh Castle is about a 20-25 min walk, and if you want to walk the Royal Mile, it's past that), but not a terrible inconvenience, just something to keep in mind if you'd like a hotel close to those locations.
