The range of pools with different temperatures was fantastic as the weather changed. Food was freshly cooked and healthy. Grounds were lovely and included a butterfly enclosure and an orchid garden which was not in bloom but was still very lovely. The 5 pools were the highlight of the grounds with the natural Hot Springs being our favorites. It was not crowded when we went so we had the pools to ourselves each time. There is also a very cool natural sauna type room which was really neat but my glasses fogged up so I didn't spend as much time in it as I might have otherwise. At reception they can arrange a lot of different outings and we took advantage of going to the cathedral waterfall which was a short walk from the hotel but because we were across the river we did need the guides who were great. For food, I have Celiac disease and while there were no GF markings on the menu I felt the staff went out of their way to provide me safe options and food. They even were able to bring me a gluten-free breakfast one morning without charging me since the free Continental breakfast does not have any options but fruit for those who need to eat gluten-free. Finally, the Blue River cocktail was delicious! Cons: the food overall was not good. I did like my breakfast of potatoes and bacon but for dinner it is very basic and cafeteria like. I had mashed potatoes and the sea bass night 1\. The sea bass was so overcooked that I picked it up by hand and ate it like jerky- it was crispy!
